It appears that Mail.app is still creating (AddressBookSync) zombies.
Boo.
You should keep quitting Mail.app every hour or so just to ensure your process count does not get too high………
This is my process list from running Mail.app for about 16 hours:

I tried that on my MacBook Pro and couldn’t duplicate your results. I just get:
3985 ?? 0:00.00 (AddressBookSync)
Mail has been running for several days with the laptop used for several hours each day.
(This laptop is about a month old and was set up clean instead of using the Migration Assistant.)
